DESCRIPTION

Cadence is the evolution of our seasonal house espresso. We have focused on bright, fruit forward and complex taste profiles to highlight the best coffees available. This blend is a beautiful balance of two delicious coffees from Panama and Colombia, both carefully processed and dried in two very different ways.

40% Panama | Alan Hartmann (Anaerobic Natural)

We’ve had the pleasure of working with the Hartmann family since 2017. With exceptional attention to detail, a focus on sustainability and endless enthusiasm for experimentation, the Hartmann’s always blow us away. The Hartmann family are considered pioneers of speciality coffee production in Panama. Founded in 1949 by Ratibor Hartmann, their estate has remained a multi-generational, family-run enterprise ever since.
Allan Hartmann has anaerobically fermented this coffee with natural yeasts from the estate. After 8 days of stable fermentation, the cherries are pulped and then left to dry on raised African beds for a further 22 days. This controlled and extended fermentation brings complex flavours to the Caturra variety. This processing method is normally reserved for their Geisha or Typica lots.

60% Colombia | Waylan Co-Op (Washed)

Waylan Co-Op emerged in 2015 in the municipality of Planadas, Tolima, Colombia. It’s inception was rooted in a mission to promote the development of the local coffee industry while offering significant support to the younger generations. The organisation was founded with the purpose of empowering young coffee producers and improving the processes involved in producing speciality coffee. Waylan focuses on sustainable practices, quality control and ethical trade. They have been instrumental in providing training, and education in the region. The farmers harvest the cherries at peak ripeness to ensure sweetness and flavour, and undergo a 32 hour fermentation in water tanks before being fully washed.
