El Jaragual is a family operated farm spanning 150 hectares across Antioquia in the central Colombian Andes, where the elevation and climate provide ideal conditions for cultivating premium coffee.
A significant proportion of the farm is dedicated to forestry, inspired by farm manager Jorge Mira’s background as a forestry engineer. The farm features a blend of pine tree plantations intended for sustainable timber production as well as conserved areas of natural forest. The plantain trees and native species act as shade for the growing coffee.
The coffee processing methods employed at El Jaragual are complex, involving extended fermentation phases with yeast inoculation and temperature adjustments such as warm water rinses and cool water quenches to stabilise the developing aromatic qualities. These techniques represent Jorge’s commitment to balancing traditional and contemporary processing methods.
