Pacas & Yellow Catuai
The sixth instalment to our house filter coffee offering. Aldemara has been growing coffee since 1998.
Her farm remained the same size (0.7 hectares) for a number of years until 2005 when she increased her farms capacity by 1.4 hectares. Aldemara then added a final 0.7 hectares in 2007. Quality is improving year on year and Aldemara is striving to raise the bar for the future. These shade grown cherries are collected on the farm, then washed and fermented for 24 hours. The parchment is dried on raised beds inside solar dryers for up to 15 days. The final part of the process before export is done at Beneficio Santa Rosa.
