We’re thrilled to welcome the return of coffee from the CAFEX Cooperative in the Kirundo province of Burundi for the third year running. This delicious, naturally processed lot brings more refined character with less boozy fermentation flavours than we’ve seen in previous years. The lot is milled and exported by Ikawa Nziza which began in 2013 as a partnership between CAFEX and Olam (Our sourcing partner). Aimed at building and promoting speciality coffee production in Burundi, the mill is the first purpose-built speciality dry mill in the region.
Once ripe cherries are selected from daily pickings, they’re pulped and sun-dried on raised African beds, being turned every 2 hours and covered during the midday heat to prevent sun damage. Once optimum moisture levels have been reached, the coffee is transported for milling at Ikawa Nziza’s dry mill before making its way to us.
