DESCRIPTION

We’re thrilled to introduce our latest coffee, Baima, named after the majestic “white horse” mountain on which it grows. Baima farm, led by Mr Laicheng Dong, produces exceptional coffee using innovative, sustainable methods. Nestled in Yunnan’s Menglian County, Mr Dong’s dedication to quality is evident in every step of the process—from hand-harvesting and meticulous sorting to the controlled double fermentation in Ecotact bags. After initial drying with a mechanical dryer, the cherries undergo final drying on raised beds, ensuring the coffee’s unique profile is preserved. With support from Yunnan Coffee Traders (YCT), Mr Dong has honed his craft over the past three years, embracing advanced pruning techniques to enhance both yield and plant health.

China’s journey into specialty coffee is both fascinating and inspiring. Though coffee cultivation began in Yunnan in the late 1800s, it is only in the past decade that producers like Baima farm have gained global recognition. Yunnan, responsible for 97% of China’s coffee production, is a treasure trove of biodiversity and culture, offering fertile lands for innovative farming practices. YCT’s mission to empower farmers through sustainable techniques and traceable sourcing has been instrumental in shaping this vibrant industry. Baima stands as a testament to this progress, combining centuries-old traditions with modern practices to produce a coffee as rich in flavour as it is in history.
