Flavour notes only tell part of the story.
Our Flavour Profile Chart has been created to help our customers gain a broader and deeper understanding of a coffee’s flavour characteristics. We’ve distilled what we love most about speciality coffee into six key categories, capturing the full sensory experience; from the weight and texture to the balance and clarity. This approach allows you to appreciate not just individual flavours, but how they come together to create a unique and memorable cup.
Body: How we describe the weight of a coffee. Higher score would mean a rich, creamy or heavy body, whereas a lower body would be more delicate and tea like.
Balance: The overall structure and alignment of flavour characteristics. A well balanced coffee has no single flavour overpowering others.
Funky: A distinctive flavour and aroma that is a result of the coffees fermentation in post harvest processing. Think over ripe fruits, wine, boozy or tangy flavours. These characteristics add complexity and excitement to the overall flavour profile and structure.
Sweetness: A positive sugary or honeyed taste that is naturally found in high quality coffees. This can also be influenced and accentuated by the roasting process. Think caramel, brown sugar or chocolate.
Acidity: Sometimes referred to as brightness. This is the liveliness that is found in many great speciality coffees. This vibrancy is a very desirable trait and can remind us of citrus, apple or berries. This is due to the naturally occurring acidity compounds in coffees grown at high altitudes.
Clarity: The distinction of individual flavours in a coffee. We select and curate well grown and processed coffees that have very clear and easy to identify flavour notes.
