We are delighted to welcome Rotutu natural back to our offering. This is the fifth year we have featured coffees from this community of 16 farmers. East Timor has become known for its washed coffees but this natural lot is a great example of the processing advancements they have developed in this part of Timor.
This coffee is dried and processed by field manager Simao Pedro de Deus at Daurfusu facility, cherries were floated for defects, fermented for 12 hours, then dried on African beds under polytunnels. The climate extended drying to 34 days (longer than previous years) This lot brings a beautiful winey acidity, creamy butterscotch and a tropical fruit like character that reminds us of dried candied pineapple.

The result is a vibrant cup with wine-like acidity, creamy butterscotch sweetness, and tropical notes reminiscent of dried candied pineapple.
